Whole Grain Mushroom, Quinoa and Brown Rice Burger
Prep Time: 12 Minutes   Cook Time: 20 Minutes   Ready In: 32 Minutes   Servings: 6   

Ingredients:
2   tsp   Olive oil
1   cup   Diced onion
2   cups   Finely chopped fresh mushrooms
4   cloves   Garlic, minced
2      Eggs
1   cup   Cooked quinoa
1   cup   Cooked medium grain brown rice
3   slices   Roman Meal bread, torn into small pieces
½   cup   Reduced-fat pepper jack cheese, shredded
1   tsp   Ground cumin
½   tsp   Chili powder
½   tsp   Salt
12   slices   Roman Meal bread, toasted and trimmed into rounds, if desired
Directions:
1.  Preheat oven to 400�F. Line baking sheet with aluminum foil.
2.  Heat oil in large pan over medium heat; add onion. Cook, stirring frequently, about 5 minutes until onion softens. Add mushrooms and garlic; cook, stirring, until the mushrooms are tender, about 5 minutes. Let cool for 5 minutes.
3.  Beat eggs in medium bowl. Add the quinoa, rice, torn pieces of Roman Meal bread, cheese, cumin, chili powder and salt; stir to combine. Scoop scant 1/2-cup portions of the mixture onto the baking sheet and shape into 6 patties, about 3 inches wide, leaving 1 inch of space between each patty; mixture will be sticky.
4.  Bake the burgers until crisp, 15 to 20 minutes.
5.  Serve on Roman Meal bread with your favorite burger fixings.
